Breakfast Strawberry Cobbler



Over the Father's day weekend we had gone strawberry picking with my uncle and aunt. I had been planning to go berry picking for a long time and we really went  overboard with the whole picking thing-y. Plucking fruits from the plants can be so additive. You see fresh succulent berries and think... "just one more" and by the time you are done, you have a overflowing basket of juicy red berries and somewhat reddish finger-tips. It is all so exciting that you find it difficult to stop even when you know you should and if a toddler accompanies then every pick becomes even more fun....

   

Anyway,  we picked 4 quarts of berries and since the trip was somewhat impromptu, afterwards, I had no clue what I would do with so many strawberries. Of course, my aunt took a few for my sister but even then we were left to deal with a little more than 3 quarts of berries...



So lately, we have nibbling on bowl full of berries and snacking of all things berrilicious. This strawberry cobbler is just one of those. It is a healthified version of Paula Deen's Strawberry cobbler. It makes a bright and lovely weekend breakfast or even brunch if you double the quanty and serve it with frozen yogurt or ice-cream.


Breakfast Strawberry Cobbler

Prep time: 40 minutes                     Cook time: 25-30 minutes                                Yield: 3



Ingredients
  • 3 cups sliced strawberries
  • 2 tbsps sugar
  • 1½ tsp cornstarch
  • 1½ tsp water
  • 3 tbsps brown sugar
  • 3 tbsps quick oats
  • 2 tbsps whole wheat flour
  • ½ tsp ground cinnamon
  • 2 tbsp peanut butter
  • ½-1 tsp candied citrus peel, ground
Cooking Directions
  1. Mix 2 tablespoons of sugar with the sliced strawberries and keep them aside for at least 30 minutes.
  2. When ready to bake, center the rack and heat oven to 350 ° F.
  3. Stir the cornstarch into 1½ teaspoon of water and keep aside.
  4. Over medium heat, simmer the strawberry sugar mixture for 5 minutes. Then stir the cornstarch solution into it and cook for another couple of minutes until the mixture thickens.
  5. Pour the strawberry mixture into a 5×8 inch baking dish or three 6 ounce ramekins.
  6. Mix the remaining ingredients, that is the brown sugar, oats, flour, ground cinnamon, ground candied peel and peanut butter. Rub them together just so that a crumbly mixture is formed. Evenly spread the mixture over the strawberry filling.
  7. Now bake the dish in the preheated oven for 25-30 minutes or until the surface is nicely browned and the strawberry filling bubbles along the edges.
  8. Cool slightly before serving
