Dutch Baby Pancakes with Peach 'n' Sour Cream # Dessert Challenge

The assigned ingredients for August were Peaches 'n' Cream. now you see after that gorgeous batch of cinnamon rolls we were in no mood for another sugar loaded dessert in the same week. so i decided to whip up something light and easy....  Dutch Baby Pancakes with Peach 'n' Sour Cream.  


we thought it made quite a dessert  when served with vanilla frozen yogurt. 

Dutch Baby Pancakes with Peaches 'n' Sour Cream 
 ingredients
  • for the batter
    • 2 eggs
    • 1/2 cup all-purpose flour
    • 4 tablespoon brown sugar
    • pinch of salt
    • few drops of almond essence
    • 1/4 cup warm milk
    • 1/4 cup sour cream
    • hint of cinnamon powder
  • for caramelizing the peaches
    • 1/2 peach sliced
    • 2 tablespoons unsalted butter
    • 2 tablespoons light brown sugar
    • handful of almonds and raisins
  • serve with 
    • icing sugar for dusting 
    • whipped cream or vanilla frozen yogurt.

  the way to make it... 
  • preheat the oven to 425 degrees F.
  • blend together all the ingredients for the batter and keep aside.
  • in a 9 or 10 inch diameter iron skillet brown the butter, add the brown sugar, peach slices, almonds and raisins to it and cook for a couple of minutes or so.
  • then pour the prepared batter over the peaches and dry fruits and bake in the preheated oven for 12-14 minutes. 
  • dust the pancake with icing sugar and serve while still hot with frozen yogurt or whipped cream.
