Chicken Fried Rice


Whether you are a home-maker or a office-goer doing a 9-to-5-job, an easy and hearty recipe is always a saviour at the end of  a long day.  My dear friend Sanchaita who has many a solutions for such week-night dinners happily agreed to share some with us in a series for simple-week-night recipes at Ma Niche...

With the Chinese New Year in mind I thought it would be perfect to start the series with her recipe for Chicken Fried Rice which tastes so much like the Chinese-take-out. Only this is better and healthier as there is no risk of added MSG... 


Now over to Sanchaita for her recipe...

Chicken Fried Rice

Always keep some boneless chicken pieces in your pantry. These beauties come in handy  when you want to cook a meal up in a jiffy. I often make this recipe with leftover rice from last night when I am craving some yummy food without the energy to put in the effort. You can also use freshly made rice. Make sure the rice is not wet or sticky. Long grain rice works best. This recipe works well even without chicken...

Chicken Fried Rice

Recipe by Sanchaita Bose
Prep time: 10 minutes                           Cook time: 8-10 minutes                                     Yield: Serves 4



Ingredients
  • 1 cup uncooked rice (preferably long-grained )
  • ¼ cup + 1 tablespoon vegetable oil
  • 2 green chillies, slit
  • 4 cloves of garlic, finely chopped
  • ¼ teaspoon finely chopped ginger
  • ¼ cup thinly sliced carrot
  • ½ cup chicken julienne (about 100 gm boneless chicken julienned)
  • 2 medium eggs
  • salt to taste
Cooking Directions
  1. Heat oil in a wok.
  2. Keep the flame medium to high. Add slit green chillies and chopped ginger garlic. Saute for few seconds and then add the carrots and chicken julienne. Stir fry for a couple of minutes till gets cooked.
  3. Remove everything from the wok and pour over the cooked rice. Add a little oil in the same wok if required.
  4. Raise the flame to high. When the oil is hot, break the two eggs directly into the wok. Scramble but do not over fry the eggs.
  5. When the eggs look fried but are still tender, add the rice. Mix well.
  6. Add salt to taste. Garnish with chopped green onions. Cover the lid and cook for a 3-4 minutes before switch off the heat.
  7. Tada!! Your chicken fried rice is ready to savour :)
