Pineapple, Orange & Celery Juice


My toddler is a healthy eater by choice. Given the option between a slice of pizza and lentil-rice, he invariably chooses the latter. He loves fish, likes boiled eggs, adores yogurt but the one thing that he refuses to eat, rather drink are juices. Store-bought apple juices he can do, but something about freshly made juices repulses him. He simply does not like them...

Recently, in an effort to warm him up to the idea of drinking fresh juices, I have been involving him in the process of making them. I suggest the ingredients and then wait for his approval. Once the ingredients are approved, I ask him to put the ingredients in the blender and blend them. We then take turns in tasting the juice and adjusting the flavors. His excitement over the whole process is endearing. He clearly feels grown-up and loves it when his dad and I thank him for the juice. And just because he juiced it all himself, he even tries a sip or two, sometimes more. 


Today we made this Pineapple, Orange & Celery Juice after nap-time. After tasting it I was fairly confident that he would drink his cupful today. But no. The dried mint put him off.  I should have strained it off before serving him. My bad. Anyway I learnt my lesson. I also learnt that the combination of pineapple, orange and celery with a hint of mint and a stir of cream of coconut is lovely and refreshing....



Pineapple, Orange, Celery Juice

Recipe by Tanusree Khandai
Prep time: 15 minutes  + chilling time                                                                  Yield: 1¾ cups



Ingredients
  • 1 cup pineapple, cut into cubes
  • 1 juice orange, peeled and deseeded
  • 1 stalk of celery, trimmed and peeled
  • ½ cup water
  • 3 tbsps cream of coconut
  • ⅛ tsp dried mint
Cooking Directions
  1. Put all the ingredients in the jar of your mixer and blend until smooth.
  2. Strain the juice and chill it for at least 30 minutes before serving.
