Red Hot Cranberry Jam

Fresh cranberries are not common in India and I hadn't tasted any till recently.  All the cranberry desserts in blogosphere were making me curious so I got home a bag  last week and after tasting the first one, thought that they somewhat resembled Kul or Jujube Fruit. Having eaten enough sweets already, my family wasn't in the mood for another one so I decided on a cranberry jam instead... a hot one because that last jalapeno had to be used right away and the combination of tart cranberry with hot jalapeno felt just right... 



Hot Cranberry Jam


Recipe by Tanusree Khandai
Prep time: 5 minutes                                                                              Cook time: 25-30 minutes
Total time: 30-35 minutes                                                                       Yield: 27 oz
Ingredients
  • 4 cups cranberry
  • 1 1/2 cup apple cider
  • 1 cup + 6 tbsps sugar
  • 1 jalapeno, radially sliced into thin pieces
  • 1 1/2 tsp crushed pepper
  • 8 cloves
  • 1/4 tsp ginger powder
  • 1/2 tsp salt
  • zest of 1 lemon
  • 1 tbsp orange peel cut into thin stripes
  • 2 tsp spiced rum
Cooking Directions
  1. Combine all the ingredients except spiced rum in a large enough container and cook over medium heat.
  2. Reduce heat to medium-low and simmer for 20-25 minutes until the jells and attains the desired consistency.
  3. Switch off the heat, stir in the spiced rum and ladle the jam into sterilized jars.


Serve this jam on little squares of toasted bread with some goat cheese and pepitas at teatime and wait for your family to reach out for seconds :)
