One minute Nutella Cake & Weekly Menu Plan

I have tried making cakes in the microwave before. They are never the same as proper oven baked ones. They are not fluffy and airy... somewhere along the line they stop being cake-y and become more 'halwa-y'. So I usually prefer the 20 minutes baking time over instant microwave-ing... unless there is a terrible time crisis or an exceptional  recipe like this one.... With only 5 plus 1 ingredients in the batter, it gives you a perfectly crumbly chocolate cake. The kind that'll make you happy in a minute...... 


Add another tablespoon of Nutella to the batter and you'll have a delicious fudgy Nuttela brownie in a cup. That one is rich and gorgeous and though we both love it, today I went for the chocolate cake. Light, fluffy and delightful !  

The original recipe is from Kirbie Cravings. I tweaked only a bit to accommodate some roasted hazelnuts...

Nutella Mug Cake
Minimally Adapted from Kirbie Cravings 
Preparation Time : 3 minutes                           Cooking Time: 1 minute            Yields: 1 6oz ramekin cake  
 Ingredients

  • 1 tbsp teff flour
  • 1 tbsp all purpose flour
  • 1/8 tsp baking powder
  • 2 tbsps Nuttela
  • 1 1/2 tbsp (plus a few drops of) fat free milk *
  • 4 roasted hazelnuts, broken into roughly crushed
* add the few drops at the end if the mixture feels a little dry.

  Instructions
  1. Whisk all the ingredients in a 6 oz ramekin until you have a smooth batter.
  2. Microwave the mixture for 1 minute. Cook an additional 20 seconds if a sharp knife inserted does not come out clean.
  3. Cool completely and enjoy ! 


As awesome as this cake is, it has one tiny drawback... you cannot bake 2 of these at a go. In the past have tried microwaving  2 cups of batter  at a go. They never come out right. The problem might be with my microwave but I thought I should warn.

    @ Amanda, Ritchil : Teff is an Ethiopian grain. It is suppose to be very healthy and you can get it at most grocery stores.     In case you do not find teff, use all-purpose flour. It works just as well.
